Ingredients

1 tbsp black pepper

2 tbsp olive oil

2 zucchinis, medium

Preparation

Make your noodles by using a vegetable peeler, mandoline or spiralizer to create long strips of zucchini. You do not need to peel the green skin off first. Depending on your preference, make the strips as thin or as thick as you like.

While you are making your strips, heat a medium-sized skillet.

Add your zucchini and the olive oil to the pan. Cook for 2 to 3 minutes.

Garnish with pepper and a pinch of salt if you wish and serve.
