Ingredients

2 lb chuck roast beef

½ cup onion, diced small

½ cup celery, diced small

½ cup carrot, diced small

½ lb golden potatoes, quartered

2 tbsp butter

3 cups beef stock

1 tbsp steak seasoning

¼ cup flour

2 tbsp red wine vinegar

2 tsp worcestershire sauce

1½ cups red wine

1 rosemary, (sprig), or thyme

salt and pepper , to taste

Preparation

Slice your roast along fat lines if the beef is fatty and sprinkle with steak seasoning.

Once seasoned, place into the base of the pressure cooker.

In a small bowl, whisk the flour together with your beef stock and butter then pour this mixture into the pressure cooker.

Finally, add the remaining ingredients and seal your cooker.

Cook for 30 minutes and set aside to cool down. Make sure that the pressure is totally released before opening the lid.

Let the beef rest for 5 minutes before slicing, then serve and garnish with chopped parsley!
