Ingredients
4 tbsp butter
4 cups mushrooms, sliced
1 onion, large, chopped
2 tbsp garlic, minced
¼ cup pimientos, chopped
1 jalapeno pepper, deseeded and minced
2 tsp dried thyme
2 tsp dried oregano
2 lb ground beef
1 cup parmesan cheese, grated
1 cup yogurt, plain
2 egg, large, slightly beaten
¼ cup ketchup, or chili sauce
2 tbsp Worcestershire sauce
8 oz cheddar cheese, shredded
2 tsp salt
2 tsp ground black pepper
Preparation
Preheat the oven to 350 degrees F and lightly grease a 9x5-inch loaf pan.
In a skillet, melt the butter over medium heat, then add the mushrooms, onion, pimientos, jalapeno pepper, garlic, oregano, and thyme. Sauté for about 6 minutes, then transfer to a large bowl.
Add in the remaining ingredients and using clean hands, mix thoroughly.
Place the mixture into the prepared loaf pan and then place them onto a baking sheet to catch any spills.
Bake for 50 to 60 minutes.
Remove from the oven and allow it to rest for 10 minutes before serving with your choice of sauce and sides.
