Ingredients
3¼ cups all-purpose flour
1 cup white sugar
¼ cup brown sugar
3 tsp baking powder
½ tsp salt
½ cup apple juice
¾ cup vegetable oil, or any neutral oil such as canola oil, grapeseed oil, sunflower oil, and corn oil
1 cup buttermilk
1 tsp ground cinnamon
3 cups apples, peeled, cored and grated
2 pcs eggs
1 tsp vanilla syrup
Preparation
Heat oven to 400 degrees F.
Grease bottoms only of 12 muffin cups or line with muffin liners.
In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well.
In a large bowl, combine apple juice, oil, buttermilk, vanilla syrup, and egg; blend well.
Add dry ingredients all at once; stir just until dry ingredients are moistened. *
Stir in chopped apples.
Fill the cups roughly ⅔ to ¾ full.
Bake for 22 minutes or until a toothpick inserted in the center comes out clean.
Cool 1 minute before removing from pan.
Serve warm.
