Ingredients
1large apple,peeled and diced into ¼-inch pieces
½tsplemon juice
1tbspagave
⅛tspcinnamon,plus ½ tsp
1½cupsapplesauce,homemade or store bought
1½cupsKing Arthur white whole wheat flour
¾cupbrown sugar,not packed
1tspbaking soda
¼tspground nutmeg
pinch allspice
¼tspsalt
2tbspvegetable oil
2large egg whites
1½tspvanilla extract

1½ozwalnuts,chopped
Preparation
In a medium bowl combine apple, ⅛ tsp cinnamon, agave, and lemon juice. Set aside.
Preheat oven to 350 degrees F. Spray a 9×5-inch loaf pan with baking spray.
In a medium bowl, combine flour, baking soda, nutmeg, cinnamon, allspice, and salt with a wire whisk. Set aside.
In a large bowl mix oil, egg whites, sugar, apple sauce, and vanilla; beat at medium speed until thick. Scrape down the sides of the bowl.
Add the flour mixture, then blend at low speed until combined. Do not over mix.
Fold in apples and walnuts.
Pour batter into loaf pan and bake in the center rack for about 55 minutes, or until a toothpick inserted in the center comes out clean.
Let the pan cool for at least 20 minutes. The bread should be at room temperature before slicing.
