Ingredients

24 oz water, warm

2 tsp kosher salt

20 oz masarepa

1 oz unsalted butter

18 oz mozzarella cheese, shredded, divided

Preparation

In a bowl, combine water and salt.

Slowly add the masarepa, and begin mixing and kneading the dough until all of the masarepa is incorporated. Let the mixture sit for 3 minutes or until the dough is hydrated.

Once the dough has rested, add the butter and cheese. Knead the dough for 4 to 5 minutes or until completely smooth and incorporated.

Using wet hands, divide the dough into 8 relatively even balls. Flatten the dough until a round shape is formed.

Add the shredded cheese to the middle of the dough, close each side, and form the dough into a ball. Carefully make a patty shape.

Preheat a large skillet over medium-low heat. Brush the pan with more softened butter, then add the arepas.

Cook on each side for 5 or 7 minutes, or until browned on both sides and cooked through. The arepas should be fluffy but not wet when cut into.

Serve and enjoy!
