Ingredients

4cupswatermelon,diced, seedless

3ozfeta cheese,crumbled

3cupsbaby arugula

¼small red onion,chopped

2tbspbalsamic vinegar

2tbspextra-virgin olive oil

⅛tspkosher salt

fresh black pepper

Preparation

Divide the balsamic vinegar, olive oil, salt, and black pepper equally between 4 pint-sized glass jars.

Divide and layer the onion, feta, watermelon, and finish with ¾ cup of arugula.
