Ingredients
1bunchasparagus,cut into thirds
3cupsspinach
½cupradish,sliced
1cupcherry tomatoes,sliced in half
½cuppeas
½red onion,sliced
¼cupfeta cheese
¼cupolive oil
1lemon,juiced
2tbspapple cider vinegar
salt and pepper,to taste
Preparation
In a large pot, boil the asparagus for 3 to 5 minutes. Rinse in cold water.
In a large bowl, combine the spinach, radish, cherry tomatoes, peas, onion, and feta cheese.
In a small bowl, whisk together olive oil, lemon juice, vinegar, salt and pepper.
Pour the desired amount of dressing over the salad and mix together.
Serve and enjoy.
