Ingredients

4largeavocados,peeled, pitted, and diced

½cuptomatoes,sun-dried, chopped

¼red onion,minced

2tbspcilantro,chopped

½tspkosher salt

16egg roll wrappers

1largeegg,beaten

vegetable oil,for frying

Preparation

Combine the avocados, sun-dried tomatoes, red onions, cilantro, and salt in a large bowl.

Layout egg roll wrappers on a tray. Brush the edges of the egg roll wrappers with the egg wash.

Fill with 3 tablespoons of filling each, then fold in the sides of the wrapper and roll closed, making sure there is no extra air in the egg rolls.

Heat three inches of oil in a dutch oven to 375 degrees F.

Fry the egg rolls for 3 to 4 minutes until golden brown then let cool on a metal cooling rack and serve.
