Ingredients
1lbshrimp,uncooked and chopped
½cupfresh lime juice
2roma tomatoes,chopped
¼cupred onion,diced
1jalapeno pepper,chopped
¼cupcilantro,chopped
3avocados,chopped
salt and pepper,to taste
Preparation
In a large bowl add the shrimp and lime juice. Let stand for 5 minutes until the shrimp turn opaque. The lime juice will cook the shrimp.
Add the tomatoes, onion, jalapeno, and cilantro and toss with the lime juice. Cover and refrigerate for 1 hour.
Add the chopped avocados and toss right before serving and salt and pepper to taste. Enjoy!
