4ozChavrie goat cheese log
8cupsmixed baby greens
4small red beets,cooked and cut
2ozpecans,glazed
2tbspbalsamic
2tbspextra virgin olive oil
1tbsphoney
Preparation
Make a vinaigrette by whisking the olive oil, balsamic and honey until smooth.
In a large bowl, toss the greens with vinaigrette and mix well.
Evenly divide the greens between four bowls. Top each bowl with one beet, 1 ounce of goat cheese, and pecans.
Serve immediately, and enjoy!
