Ingredients

2 ciabatta bread, cut in half horizontally

2 tbsp mayonnaise

6 tbsp basil pesto, prepared

4 tbsp sun dried tomatoes, pureed

1 cup red peppers, roasted & cut into strips

1 cup feta cheese, crumbled

1 cup basil leaves, fresh

Preparation

In a small bowl, mix together mayonnaise and basil pesto. Set it aside.

Toast your bread, then spread the pesto onto one half of the bread.

Spread the other half with sun-dried tomatoes.

Arrange roasted red peppers on the bottom piece.

Cover with feta cheese, then fresh basil.

Top with the remaining slice of bread. Repeat until you have 2 sandwiches.

Place cocktail picks on opposite ends of the sandwich to hold them in place. Slice each diagonally, forming 2 triangular halves. You should have 4 triangular halves in total.

Serve immediately!
