Ingredients

2stripsbacon,diced

¼cuponion,diced

1clovegarlic,minced

8ozground sirloin,(85/15)

¼cupdry bread crumbs

2tbspfresh parsley,minced

½tsppaprika

½tspkosher salt

½tspblack pepper

1egg,beaten

½cupbarbecue sauce

Preparation

Preheat oven to 400 degrees F. Coat a broiler pan with nonstick spray.

Cook bacon in a skillet for about 4 minutes until starting to crisp. Transfer to a paper-towel-lined plate. Pour off drippings from skillet, saving 1 tablespoon.

Sauté onion in drippings over medium heat for about 3 minutes until softened. Add garlic and cook for 1 minute.

Combine ground sirloin, bacon, onion mixture, bread crumbs, parsley, paprika, salt, and pepper in a bowl. Stir in beaten egg.

Form mixture into 1-inch meatballs and place on prepared broiler pan.

Brush meatballs with barbecue sauce.

Bake meatballs for about 10 minutes until fully cooked.

Top with more barbecue sauce.
