Ingredients
6 oz potatoes, finely diced
2½ oz carrot, finely diced
8 cups water, or vegetable broth
4 cups white beans, or any of choice, canned and undrained
2 cups ham, finely diced, cooked
1 cup barley
1 cup tomatoes, deseeded and diced
1 bay leaf
salt and ground black pepper, to taste
Preparation
In a crock pot, add the potatoes, carrots, tomatoes, bay leaf, beans, barley, ham, and water or vegetable broth.
Cook on high for 5 hours.
Adjust seasoning with salt and pepper. Portion and serve!
