Ingredients
½cupbeans,or lentils, cooked
½cupfresh mint,or cilantro, or Italian parsley leaves
1lemon juice
1large egg
1garlic clove
1cupextra virgin olive oil
salt and pepper,to taste
Preparation
Combine the beans, herbs, lemon juice, egg, garlic, and oil in a food processor and blend until smooth for about 1 minute.
With the machine running, pour in the remaining oil through the feed tube in a thin, steady stream and to make a creamy and smooth sauce.
Stop the machine and scrape the sides. Taste the sauce and season with salt and pepper.
