Ingredients
1 cup red beans
2 tbsp olive oil
1 onion, large, chopped
⅛ tsp cinnamon
½ lb fresh pork rind
1 ham bone
⅛ lb salt pork, chopped
½ tsp salt
½ tsp pepper
6 cups water
1½ cup noodles
2 tbsp parmesan cheese, grated
Preparation
Put all ingredients except for noodles and cheese in a soup pan.
Cover tightly and boil gently for 2½ hours.
Add noodles and cook for 8 more minutes.
Sprinkle with cheese and serve.
