Ingredients

2tspolive oil

6-7scallions,chopped

2garlic cloves,minced

1tomato,diced

1tspcumin

½tsphomemade sazon

½lbbeef,cubed into small bite size pieces

5cupswater

Beef bullion

1carrot,peeled and sliced

2tbspyellow bell pepper,diced

2mediumpotatoes,peeled and cubed

1cupquinoa,cooked

6tbspcilantro,fresh chopped

Salt and pepper,to taste

Preparation

Saute oil in a large pot. Add scallions and garlic and sauté for 3 minutes until soft over medium heat.

Add tomato, cumin, sazon with achiote, ¼ cup cilantro, and cook for another 2 minutes.

Add beef, water, bullion, carrot, bell pepper, salt and bring to a boil.

Cover and simmer on low for about 1½ hours, until meat is tender.

Add potato and cooked quinoa; cook for about 25 minutes.

Add remaining chopped cilantro and serve.

If using a pressure cooker, cook soup with meat for 45 minutes. Add potato and quinoa, and cook for 10 minutes more.
