Ingredients
1lbdry macaroni noodles,or similar
1lblean ground beef
2garlic cloves,minced
1cuponion,diced
1cupgreen pepper,diced
28ozcrushed tomatoes,(1 can)
½cuptomato sauce
4tbsptomato paste
½tspdry basil
salt and pepper,to taste
3cupscheddar cheese,shredded, divided
¼cupparmesan cheese,freshly shredded
3tbspfresh parsley,chopped, divided
Preparation
Preheat the oven to 375 degrees F.
Cook the noodles for ¾ of the time according to package. Drain and rinse under cold water.
Meanwhile, brown the beef, garlic, and onion in a frying pan. Drain.
Combine the green peppers, beef, noodles, tomatoes, tomato sauce, and paste, basil, salt, pepper, 1 cup of cheddar cheese, and 2 tablespoons of fresh parsley. Pour the mixture into a 9×13-inch casserole dish.
Combine the remaining cheeses and 1 tablespoon of parsley, then sprinkle them on top of the casserole.
Bake uncovered for 35 to 40 minutes or until bubbly and the cheese is browned.
