Ingredients

1½lbschicken breasts,(4 pieces), boneless skinless

1zucchini,halved lengthwise, thinly sliced into half-moons

3medium tomatoes,halved, thinly sliced into half-moons

2yellow bell peppers,thinly sliced

½red onion,thinly sliced

2tbspextra-virgin olive oil

1tspItalian seasoning

kosher salt

freshly ground black pepper

1cupmozzarella,shredded

parsley,freshly chopped, for garnish

Preparation

Preheat the oven to 400 degrees F.

Make slits in each chicken breast, being careful not to cut through completely, then stuff each with zucchini, tomatoes, bell peppers, and red onion.

Drizzle with oil and season with Italian seasoning, salt, and pepper. Sprinkle with mozzarella.

Bake for 25 minutes until the chicken is cooked through and no longer pink inside.

Garnish with parsley, serve warm, and enjoy!
