Ingredients
2 tbsp whole milk
2 eggs
½ cup all-purpose flour
2 tsp salt
1 cup breadcrumbs
2 mahi-mahi fillets, (roughly 14 oz total), or haddock, cod, pollock, or hake fillets, skin-off
5 cups vegetable oil, for frying
½ cup mayonnaise
2½ tbsp pickle relish
1 tbsp corn syrup
salt, to taste
2 hamburger buns, toasted, cut in half
2 slices American cheese
3 oz potato fries, per serving
½ cup iceberg lettuce, per serving, shredded
Preparation
Preheat oil for frying.
Combine whole milk and eggs in a bowl. Mix until thoroughly combined.
In a separate bowl, combine the flour and salt. Mix well.
Dunk the fish fillets into the flour mixture, followed by the egg mixture and lastly the breadcrumbs. Make sure they are coated evenly.
Deep-fry fish until golden brown.
Toast the hamburger buns while combining all the ingredients for the tartar sauce in a bowl and mix thoroughly. Season to taste and adjust accordingly.
Assemble the sandwiches with 1 tablespoon of tartar sauce on both sides of the bread, followed by the fish, cheese, lettuce, and cover with the top bun. Serve with a side of fries.
