Ingredients
2¾ cups all-purpose flour
1 cup brown sugar
1 tsp salt
½ cup unsalted butter, at room temperature
1 tbsp baking powder
1 cup milk
2 eggs
½ cup almond flakes, or pecans, roasted
cooking spray
½ cup granulated sugar
½ cup all-purpose flour
¼ cup unsalted butter, at room temperature
1 tbsp ground cinnamon
Preparation
Preheat the oven to 360 degrees F and grease a springform cake tin with cooking spray.
Sift together flour, salt, and baking powder. Set aside.
Pour into two greased 9-inch pie plates and scatter reserved crumbs over top.
In a mixing bowl, combine all ingredients for the streusel topping. Mix until crumbly and set aside.
In another mixing bowl, cream together sugar and butter until pale.
Add milk and eggs. Continue creaming until incorporated.
Fold in sifted flour mixture and almond flakes into the butter mixture until evenly incorporated.
Transfer the cake batter into the cake tin, then sprinkle the streusel topping on top. Lightly tap to release any air bubbles and transfer to the oven.
Bake for 25 to 30 minutes, or until the cake tester comes out clean.
Once done, transfer onto cooling racks and cool down completely. Portion accordingly and serve.
