Ingredients
1 cup all-purpose flour, plus more for kneading
1 cup Bisquick Pancake and Baking Mix
½ cup milk, add more as necessary
½ tbsp salt
1 tsp ground cumin
1 tsp ground coriander
¼ cup vegetable shortening
sour cream
lime wedges
mixed cheese blend
guacamole
sauteed vegetables
Preparation
Sift together the all-purpose flour, Bisquick Pancake and Baking Mix, cumin, salt, and coriander into a large bowl. Set aside.
Combine the vegetable shortening and milk until evenly incorporated.
Fold the dry ingredients into the wet ingredients until a dough is formed.
Dust the work surface with flour. Transfer the dough onto the surface and cover your hands with a bit of flour. Knead the dough for 10 minutes, then divide the dough into as many portions as you wish.
Roll the dough portions into balls and roll each dough into a thin sheet using a floured rolling pin. Make sure to apply flour to your rolling pin as well to keep it from sticking.
Dust a cake ring with flour, then press it onto the dough portions to cut. Stack the cut dough onto a plate. Set aside any extra dough for future use.
Grease and heat up a cast iron pan or griddle. Sear the dough portions until they show a brown color on both sides. It is normal for the tortilla to form bubbles of hot air during the searing process.
Serve them either along with some yummy Mexican dishes, or lime wedges, sauteed bell peppers, guacamole, sour cream, and mixed cheese blend. Enjoy!
