Ingredients
12wonton wrappers
1canRotel diced tomatoes and green chilis,drained
15ozblack beans,1 can, drained
1canwhole-kernel corn
1mango,peeled, diced
½cupgreen onions,chopped
½tspground cumin
1handfulcilantro,fresh, chopped
Preparation
Preheat the oven to 350 degrees F.
Make the wonton “cups” by gently pressing each wrapper down into a mini-baking cup, careful to be sure that the corners are folded out and not in.
Bake for 7 to 10 minutes, or until the cups are firm and slightly golden.
Meanwhile, stir together all the remaining salsa ingredients in a bowl until combined. Once the wonton cups are ready, spoon the salsa into each cup, and serve immediately.
