Ingredients
2tspolive oil
½onionfinely diced
2garlic clovesminced
1½cupsfrozen corn
15ozblack beansdrained and rinsed
1½tspchili powder
½tspcumin
½cupsalsa
salt & pepperto taste
8corn tortillasor flour tortillas, 6 – inch
toppingsas desired
Preparation
Cook onion and garlic in olive oil over medium heat until tender, about 4 minutes.
Add corn, black beans, seasonings, and salsa. Simmer 5 to 6 minutes or until liquid has evaporated.
Slightly mash some of the beans if desired. Taste and season with salt and pepper to taste.
Spoon into tortillas and top as desired.
