Ingredients

4 pcs egg yolks, hard-cooked

salt and ground white pepper, to taste

¼ cup crème fraiche, or mayonnaise

1 pc crostini bread, cut and toasted

2¼ oz black olives, drained and finely chopped

1 tbsp fresh basil leaves, minced

2 tsp balsamic vinegar

2 tsp extra-virgin olive oil

1 clove garlic, minced

⅛ tsp red pepper flakes, or to taste

⅛ tsp ground black pepper, or to taste

parsley, chopped

Preparation

To make the caviar, stir together all the ingredients in a small bowl.

Taste and adjust the seasoning.

To prepare the egg, using a small spatula, finely mash the egg and mix the crème fraiche or mayonnaise in a small bowl. Season to taste with salt and ground white pepper.

To assemble each serving squeeze roughly 1 tablespoon of egg mixture onto the crostini and top with 1 teaspoon of black olive caviar mix.

Garnish with parsley and assembled on a tray or platter and serve, you may also add a small cut of cold cut meat. Serve and enjoy!
