Ingredients
6cupsfresh broccoli,cut into bite sized pieces
2cupswhite rice,cooked
3tbspbutter
¾cuponion,(about 1 small), diced
3tbspflour
2cupsmilk
¼tspgarlic
¼tspblack pepper
½tspdry mustard powder
½tsppaprika
salt,to taste
3tbspcream cheese
2cupscheddar cheese,shredded, divided
Preparation
Preheat the oven to 350 degrees F.
Cook the onion and butter on medium-low heat until softened and translucent. Stir in the flour, garlic powder, and pepper, then cook for additional 2 minutes.
Gradually pour in the milk while whisking. Continue whisking over medium heat until thick and bubbly.
Remove from heat and add the dry mustard, paprika, cream cheese, and 1½ cups of cheddar cheese. Stir until melted.
Place the broccoli in boiling water for about 2 minutes.
Stir together rice, broccoli, and cheese sauce. Place in a greased 2-quart casserole dish, then top with remaining cheese
Bake for 35 minutes or until bubbly and cheese lightly browned.
