Ingredients

1tspdark sesame oil,divided

1tbspfresh ginger,minced, peeled

4clovesgarlic,minced

1cupred bell pepper,finely chopped

1cupscallions,chopped

1tspcurry powder

2tspred curry paste

½tspcumin,ground

4tsplow-sodium soy sauce,tamari for gluten-free

1tbspbrown sugar

2tspAsian fish sauce

14ozlight coconut milk,(1 can)

¼cupfresh cilantro,chopped

6tilapia fillets,(6 oz)

salt

cooking spray

lime wedges,for serving

Preparation

Preheat the broiler.

Heat ½ teaspoon of oil in a large nonstick skillet over medium heat. Add the ginger, garlic, pepper, and scallions, and cook for 1 minute.

Stir in the curry powder, curry paste, and cumin, and cook for 1 minute.

Add the soy sauce, sugar, Asian fish sauce, and coconut milk. Bring to a simmer (do not boil).

Remove from heat, and stir in cilantro or basil if using.

Brush fish with ½ teaspoon of oil, then sprinkle with ¼ teaspoon of salt. Place the fish on a baking sheet coated with cooking spray.

Broil for 7 minutes or until fish flakes easily when tested with a fork.

Serve fish with sauce, rice, and lime wedges.
