Ingredients
¼ cup water
3 tbsp brown sugar
3 tbsp honey
1 tbsp olive oil
2 tsp dried thyme
4 sweet potatoes, (roughly 20 oz), sliced lengthwise
3 tbsp parsley, chopped
salt and ground black pepper, to taste
Preparation
Preheat the oven to 400 degrees F then line a baking sheet with parchment paper.
In a bowl, combine water, brown sugar, oil, thyme, and honey. Whisk until the sugar has dissolved.
Add the sweet potatoes, and season heavily with salt and pepper. Toss to coat and transfer to your lined baking sheet.
Cover with foil and bake for 30 to 40 minutes until tender.
Remove foil and bake an additional 10 minutes.
Before serving, combine baked potatoes with parmesan and parsley in a bowl.
Toss to combine and serve immediately.
