Ingredients

2lbsmedium Yukon gold potatoes,(6 to 7 pieces) peeled, cubed

¾cuplow-fat buttermilk,plus an additional 2 tbsp

1tbsplight butter

dashkosher salt and fresh ground pepper,to taste

¼cupfresh chives

Preparation

Put the potatoes in a large pot with salt and add enough water to cover the potatoes. Bring to a boil.

Cover and reduce the heat. Simmer for 20 minutes, or until the potatoes are tender.

Drain and return the potatoes to the pot.

Add the buttermilk, light butter, and remaining ingredients. Mash until smooth.

Season with salt and pepper to taste.
