Ingredients

8tbspolive oil

½lbsourdough baguette

¾tspsalt

¾tspfresh ground black pepper

4garlic clove

1tbspcooking oil

¾lbshiitake mushrooms

½cupfresh parsley,chopped

2eggs,hard cooked

3tbspwine vinegar

2small romaine lettuce heads,(about 1 lb each)

¼cupparmesan,grated

Preparation

Put the eggs, vinegar, remaining garlic, ¼ teaspoon of pepper, and 5 tablespoons of olive oil in a blender or food processor and whir until smooth.

Add the lettuce to the mushrooms and croutons in a bowl, sprinkle with Parmesan, and then add the dressing. Toss to coat.

Serve and enjoy!
