Ingredients
2 slices bacon, cut into 5 to 6 pieces
2 onion, chopped
1 clove garlic, chopped
14½ oz spinach, (1 can) drained well
½ cup chicken stock
1 tsp white sugar
2 tsp hot sauce, Franks or Texas Pete
2 tsp white vinegar
salt, to taste
pepper, to taste
Preparation
In a medium-sized saucepan over medium heat, cook the slices of bacon until crispy. Do not discard the bacon grease.
Next, add the onion and garlic. Cook for about 3 minutes until fragrant and softened.
Add the drained spinach, chicken stock, sugar, hot sauce, and white vinegar to the pan. Stir frequently and continue to cook until heated through.
When heated through, season the greens with salt and pepper. Adjust the amount according to your taste.
