Ingredients
⅓cupextra-virgin olive oil
⅓cuprice vinegar
2large carrots,about ⅔ cup, peeled and roughly chopped
2tbspfresh ginger,peeled and roughly chopped
2tbsplime juice
1tbsphoney,plus 1 teaspoon
1½tspsesame oil,toasted
¼tspsalt,more to taste
Preparation
In a blender, combine all of the salad dressing ingredients. Blend until completely smooth.
Taste and add salt to desired taste. If it’s too sour, blend in a bit more honey.
Serve over greens and any other ingredients you’d like.
