Ingredients

1½cupscarrot juice,fresh

1medium carrot

1fresh ginger slice,(¾-inch thick), peeled

2tbsplime juice,fresh

1tbspsoy sauce

1tspmiso paste

½cuppeanut oil

cayenne pepper

Preparation

In a small saucepan, boil the carrot juice for about 10 minutes until it is reduced to 3 tablespoons.

Transfer to a blender and let cool slightly. Add the chopped carrot, ginger, lime juice, soy sauce, and miso and blend until the carrot is minced.

With the machine on, add the oil in a thin, steady stream. Season with cayenne and transfer to a glass jar.

Serve over salads, and enjoy!
