Ingredients

½cupunsalted butter,(1 stick) at room temperature

1cupgranulated sugar

2large eggs,at room temperature

1½cupsall purpose flour,spooned into measuring cup and leveled off with a knife

1tspbaking soda

¾tspground cardamom

¾tspcinnamon

¼tspground ginger

¼tspallspice

¾tspsalt

1cupvery ripe bananas,(about 3 bananas) mashed

½cupsour cream

1tspvanilla

½cupwalnuts,chopped, optional

Preparation

Preheat oven to 350 degrees F. Grease a 9×5-inch loaf pan with non-stick cooking spray.

In a large bowl or electric mixer fitted with the paddle attachment, beat the butter and sugar for about 2 minutes until light and fluffy. Beat in eggs 1 at a time, incorporating well after each addition. Scrape down sides of bowl as necessary.

In a medium bowl, whisk together the flour, baking soda, cardamom, cinnamon, ginger, allspice, and salt. Add to the butter mixture and beat gently until just combined.

Add bananas, sour cream, and vanilla and mix on low speed until just combined. Gently stir in nuts if using.

Pour batter into prepared loaf pan and bake for 60 to 70 minutes until deep golden brown and cake tester inserted into the center comes out clean. Let rest in pan for about 10 minutes, then turn out onto a rack to cool completely.
