Ingredients
1 cup rice, cooked, cooled
1 cup sharp cheddar cheese, grated
2 cups milk
2 eggs
1 tsp salt
¼ tsp paprika
¼ cup unsalted butter, chilled and cubed
¼ tsp parsley, chopped
Preparation
Preheat the oven to 360 degrees F and grease a 10-inch baking casserole of your choice.
In a mixing bowl, beat together the eggs, milk, salt, and paprika.
Layer the rice at the bottom of your baking casserole, then cover with cheese.
Pour over the egg mixture on top and dot with butter.
Bake for 45 minutes until set and lightly brown.
Garnish with parsley and serve.
