Ingredients
8ozcream cheese
⅓cuppowdered sweetener,or powdered sugar
1large egg
1tsppure vanilla extract
½cuplight butter,or spread of choice, softened
¾cuplight brown sugar
⅓cupgranulated sugar,or a natural sweetener

1½cupsflour,plain or all-purpose
¼tspbaking soda
⅓tspsalt
⅔cupchocolate chips,dark or semi-sweet
Preparation
Preheat the oven to 350 degrees F. Line an 8-inch cast-iron skillet with baking or parchment paper, then set aside.
In a small bowl, beat the cream cheese, sugar, egg, and vanilla with a beater until smooth. Set aside.
In a large bowl, combine the butter, sweetener or sugar, and vanilla, then whisk until light and creamy. Add the egg, then whisk again until combined.
Add the flour, baking soda, and salt, then mix the dry ingredients in the wet ingredients with hands to form a dough. If the dough is too wet, add in 1 tablespoon of extra flour at a time until a cookie dough until pliable.
Fold in ½ cup of the chocolate chips.
Press half of the cookie dough evenly into the bottom of the skillet to form a base. Spread the cream cheese mixture over the dough.
With the remaining cookie dough, press tablespoon-sized doughs in the palms of hands, then place them over the cream cheese mixture until fully covered. Sprinkle the top with the remaining chocolate chips.
Bake for 35 to 40 minutes or until golden brown on the edges and firm to the touch.
Cool for 30 minutes to 1 hour, then refrigerate for at least 2 hours until chilled.
Cut into 16 slices, serve, and enjoy!
