Ingredients
5½ oz yellow onion, chopped
1 lb ground beef
8 oz cheddar cheese, shredded
¼ cup unsalted butter
½ cup vegetable oil
¾ cup milk
1 egg
8½ oz cornbread mix, (1 box)
15 oz black beans, (1 can), drained
1 cup corn kernels, drained if using canned
1 tsp chili powder
½ tsp ground cumin
½ cup beer, of your choice
salt and ground black pepper, to taste
parsley, chopped
Preparation
Preheat the oven to 400 degrees F. Melt the butter in a deep skillet.
Add the onions and meat. Saute briefly.
Add cumin, chili powder, corn, and black beans. Continue sauteing.
Deglaze with beer and reduce briefly.
Season to taste with salt and pepper. Adjust accordingly and set aside.
In a bowl, combine cornbread mix, egg, oil, and milk. Whisk until a batter is formed.
Grease a skillet and pour the cornbread mixture. Transfer to the oven and bake for 15 minutes.
Remove the skillet from the oven, add the meat mixture and top the skillet with shredded cheese.
Bake for 10 more minutes.
Garnish with chopped parsley and serve.
