Ingredients

8 egg whites

salt and ground black pepper, to taste

1 cup broccoli florets, blanched and cooled

½ cup mozzarella cheese, shredded

½ cup yogurt

½ tsp garlic powder

¼ tsp dried thyme

cooking spray

parsley, chopped

Preparation

Preheat your oven to 350 degrees F and grease a baking casserole of your choice with cooking spray.

In a bowl, add together all your ingredients. Season with salt and pepper, then whisk until evenly incorporated.

Pour mixture into your greased baking casserole and bake for 40 minutes or until firm.

Allow your quiche to cool briefly at room temperature before portioning, about 10 minutes.

Portion accordingly, garnish with parsley and serve as-is for a light breakfast, or with a side salad as a light lunch.
