Ingredients

4 tbsp unsalted butter

1 large red onion, thinly sliced

4 white potatoes, peeled and thinly sliced

1 lb ham, cut into bite-sized pieces

salt and pepper, to taste

1 cup milk

8 oz sharp cheddar cheese, or Colby jack cheese, grated

¼ cup sour cream

2 tbsp green onions, for garnish

fresh parsley, chopped, for garnish, optional

Preparation

Preheat the oven to 350 degrees F.

Melt butter in a 10-inch skillet over medium heat.

Add onions and sauté until soft, for about 4 minutes. Remove from heat.

Place a layer of sliced potatoes on the bottom of a 4-qt. casserole dish or baking dish.

Add about ⅓ of the butter-onion mixture and 4 oz of the diced ham.

Sprinkle liberally with salt and pepper.

Continue to repeat this pattern for 3 additional layers, ending with a potato layer on top.

Pour milk all over the dish. Place the casserole in the oven and bake for 1 hour.

Remove from the oven and add cheese on top.

Bake for an additional 15 minutes or until the cheese begins to brown.

Remove from the oven and allow to rest for at least 10 minutes.

Sprinkle green onions or fresh chopped parsley on top of the casserole, and serve with sour cream. Enjoy!
