Ingredients

6medium potatoes,baked, or boiled

¼cupbutter

4ozcream cheese,softened

⅔cupsour cream

½cupmilk,or cream, add more or less to taste

½tspgarlic powder

1tbspfresh parsley,chopped

2cupscheddar cheese,shredded

2green onions,thinly sliced

10bacon slices,cooked, crumbled

salt and pepper,to taste

2bacon slices,cooked, crumbled

½cupcheddar cheese

Preparation

Preheat the oven to 375 degrees F.

Mash the warm baked or boiled potatoes with a potato masher. Add the butter, cream cheese, and sour cream.

Mash while adding the milk, a little at a time, until a creamy consistency is reached.

Stir in the garlic powder, parsley, cheddar cheese, green onions, bacon, salt, and pepper, then spread into a 2-quart casserole dish.

Sprinkle with green onions, crumbled bacon, and cheddar cheese, then bake for 25 to 30 minutes, or until the cheese has melted and the potatoes are hot.
