Ingredients

1tbspolive oil

2chicken breast,halves, skinless, boneless, cut into chunks

20chorizo sausage,slices

½onion,chopped

1green bell pepper,sliced

1garlic clove,minced

14oztomatoes,(1 can) diced

¾cuphard apple cider,or more to taste

1½tsptomato paste

salt and ground black pepper,to taste

1cuppasta,penne

Preparation

Heat the olive oil in a large skillet over medium heat. Cook and stir the chicken in the hot oil for about 10 minutes until no longer pink in the center and the juices run clear.

Stir in the chorizo and onion, and cook for 2 minutes. Add the green bell pepper and garlic, and cook for about 5 minutes until softened.

Stir in the tomatoes, apple cider, tomato paste, salt, and pepper, and bring to a boil.

Mix the penne into the skillet. Cover and simmer. Add more cider if needed, and cook for about 15 minutes until the penne is tender.

Uncover and cook for about 5 minutes more, until the sauce thickens slightly.
