Ingredients
¾lbplum tomatoes
½cupblack olives
¼cupfresh parsley,chopped
1roasted chicken
½tspsalt
½tspfresh ground black pepper
2tbspred wine vinegar
3tbspcooking oil
8small flour tortillas,or 4 large tortillas
½lbfeta cheese
Preparation
Heat the oven to 450 degrees F.
In a large glass or stainless-steel bowl, combine the tomatoes, olives, parsley, chicken, salt, pepper, vinegar, and 3 tablespoons of oil.
Brush the tortillas on both sides with oil, and then put on baking sheets, overlapping if necessary.
Bake the tortillas for 2 to 3 minutes until starting to brown. Turn the tortillas and brown the other side for 2 to 3 minutes longer.
Remove the baking sheets from the oven and top each tortilla with an equal amount of feta cheese.
Return the baking sheets to the oven. Cook for 1 to 2 minutes longer until the cheese is just melting.
Top the tortillas with the chicken mixture, serve, and enjoy!
