Ingredients
1 whole chicken breast, boneless
season salt
1 cup carrots
½ cup celery
½ cup onion
1 bay leaf
12 cup water, divided
2 tsp. salt
1 tsp. pepper
16 oz. Acini Di Pepe pasta
Preparation
Rinse chicken breast and sprinkle with season salt.
Place chicken, carrots, celery, onion, bay leaf and 8 cups of water in a large pot.
Cook, covered on medium high heat for 45 minutes.
Take pot off heat.
Remove chicken and cut into small pieces.
Return chicken to pot.
Return to heat.
Add 4 cups water , salt and pepper.
Bring pot back to boil and add Acini Di Pepe.
Cover pot and cook about 20 minutes longer or until Acini Di Pepe is tender.
Remove bay leaf and enjoy!
