Ingredients

1½cupslong-grain rice

3cupswater

⅓cupItalian-style salad dressing,zesty

1½lbslarge shrimp,peeled, deveined

¼cuporange marmalade

2tbspchipotle peppers,in adobo sauce, chopped

¼cupfresh cilantro,chopped

Preparation

Bring the rice and water to a boil in a saucepan.

Reduce the heat to medium-low, cover, and simmer for about 20 to 25 minutes until the rice is tender and the liquid has been absorbed.

Heat the salad dressing in a large skillet over medium-high heat. Cook the shrimp in the dressing for about 4 minutes, until beginning to firm.

Stir the marmalade and chipotle peppers into the shrimp mixture and continue cooking for about 3 minutes more until the shrimp are completely pink.

Remove from heat and stir in cilantro.

Serve over rice and enjoy!
