Ingredients
½cupegg whites,room temperature
⅛tspcream of tartar
½cupsugar
1tspvanilla extract
2tbspunsweetened cocoa powder
1cupchocolate chips
Preparation
Heat the oven to 300 degrees F. Cover the cookie sheet with silpat or nonstick silicone pad.
Using a mixer, beat the egg whites and cream of tartar together in large bowl at high speed until soft peaks form.
Gradually add sugar a little at a time, then vanilla, beating well after each addition until stiff peaks form, the sugar is dissolved and the mixture is glossy.
Sift the cocoa onto egg white mixture, then gently fold until combined. Fold in the chocolate chips.
Drop the mixture by heaping tablespoons onto a cookie sheet, yielding 30 to 32 cookies.
Bake for 34 to 40 minutes or just until dry. Cool slightly, then remove from the cookie sheet to cool completely on a wire rack.
