Ingredients

1½cupsall purpose flour

1tspbaking soda

½tspbaking powder

1¼tspcream of tartar

½tspsalt

½cupcanola oil

⅔cupgranulated sugar

1large egg,lightly beaten

1cupzucchini,finely grated

1cupbanana,mashed

1½cupchocolate chips

Preparation

Preheat the oven to 350 degrees F. Grease an 8.5 x 4-inch loaf pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, cream of tartar, and salt. Set aside.

In the bowl of an electric stand mixer, beat together the canola oil and sugar.

Add the egg, then continue mixing.

Add the zucchini, then mix on medium until well blended.

Starting and ending with the flour, alternate adding the flour mixture and the mashed banana, a little at a time, while the mixer runs on low.

Fold in the chocolate chips, then pour the batter into the prepared loaf pan.

Bake for 50 to 55 minutes, tenting with foil for the last 15 minutes to avoid too much browning.

Allow the bread to cool before slicing.

Serve warm with a little butter, and enjoy!
