Ingredients
2 garlic cloves, minced
2 tbsp champagne vinegar
3 tbsp honey
2 tbsp dijon mustard
¼ tsp salt
¼ tsp fresh ground black pepper
¼ cup olive oil
12 oz fresh spring greens
⅔ cup almonds, sliced
⅔ cup feta cheese
4 mandarin oranges, seedless, peeled, and segmented
1 pomegranate , seeded
Preparation
In a small bowl whisk together minced garlic, champagne vinegar, Dijon mustard, honey, salt and pepper.
Slowly drizzle in olive oil; whisking continuously.
In a large bowl add spring green, sliced almonds, feta cheese, mandarin oranges and pomegranate arils.
Drizzle the dressing over the salad and toss to coat.
Serve and enjoy.
