Ingredients
2cupschicken,cubed, cooked
1cupgrapes,seedless
½cuppecans
½cupcelery,diced
½cupmayonnaise,low fat
¼cupdijon mustard
1tspdried tarragon
½tspsalt
¼tsppepper
6croissants
lettuce,or spring salad mix
Preparation
Put the chicken, grapes, pecans, and celery in the large mixing bowl.
In the small bowl, stir the mayo, mustard, tarragon, salt, and pepper together until well combined.
Add the dressing to the large bowl and toss to coat all of the salad pieces.
For each sandwich, put a couple leaves of lettuce on the bottom half of a croissant, spoon about 1 cup of chicken salad on that, and top with the other half of the croissant.
Serve with lemonade, and enjoy!
