Ingredients
oil,your preference, to taste
1lbchicken breast,boneless, skinless, cubed
salt and pepper,to taste
1lime,juiced
⅓cupfresh cilantro,minced
1red bell pepper,diced
½red onion,diced
2clovesgarlic,minced
1bagriced cauliflower
1cupcorn,steamed
½tspchili powder,optional
1canblack beans,rinsed, drained, optional
lime wedges,optional
Preparation
Heat the preferred cooking oil in a large skillet over medium-high heat.
Add the chicken, season with salt and pepper, and cook until cooked through and no longer pink.
Add the lime juice and cilantro. Stir to combine.
Remove the chicken from the pan, place on a plate, and set aside.
Add a little more oil to the pan if needed, then add the red onion, bell pepper, and garlic.
Stir to combine. Allow to cook until the onion begins to turn transparent while stirring occasionally.
Add the riced cauliflower, corn, and chili powder. Cook until the cauliflower is soft, then remove from heat.
Distribute the black beans, chicken, and cauliflower mixture evenly between 4 containers.
Top with a wedge of lime.
