Ingredients

¼ cup cilantro, roughly chopped

1 cup arugula

1 cup cherry tomatoes, halves

1 cucumber, diced, and deseeded

½ cup red onion, finely chopped

2 tbsp lime juice, fresh

1 tsp granulated sugar

¼ tsp salt

¼ tsp black pepper

1 cup strozzapreti pasta, dry, cooked and drained

Preparation

Place the cucumber, tomato, red onion, lime juice, cilantro, sugar, salt, and pepper in a bowl with the pasta. Toss gently.

Transfer into a serving bowl and chill for at least 15 minutes before serving.
